Processamento industrial da Saccharomyces cerevisiae para uso na alimentação dos ruminantes

Abstract

No Brasil a levedura Saccharomyces cerevisiae é utilizada pelas usinas na produção de bioetanol. Seu uso na alimentação de ruminantes é uma boa opção para maximizar o desempenho animal. No mercado há uma grande oferta de produtos, graças ao valor nutricional, principalmente ao teor de proteína. Objetivou-se elaborar uma revisão de literatura sobre o processamento industrial da levedura Sacharomyces cerevisiae e seu aproveitamento na dieta dos ruminantes. O uso da levedura na alimentação animal e humana é devido ao seu considerável valor nutricional. A espécie mais utilizada na nutrição de ruminantes é a Sacharomyces cerevisiae. Portanto, as usinas sucro-alcooleiras beneficiam na comercialização de células ativas e/ou inativas e pode apresentar diversos benéficios no ambiente ruminal, intestinal e no desempenho produtivo dos ruminantes.In Brazil, the yeast Saccharomyces cerevisiae is used by plants in the production of bioethanol. Its use in ruminant feed is a good option to maximize animal performance. There is a wide range of products on the market, thanks to their nutritional value, especially their protein content. The objective was to elaborate a literature review on the industrial processing of the yeast Sacharomyces cerevisiae and its use in the diet of ruminants. The use of yeast in animal and human food is due to its considerable nutritional value. The species most used in ruminant nutrition is Sacharomyces cerevisiae. Therefore, the sugar-alcohol plants benefit from the commercialization of active and/or inactive cells and can present several benefits in the ruminal and intestinal environment and in the productive performance of ruminants.
