Resumo
As nozes são um alimento de extrema importância quando se trata de
saúde, pois são ricas em ácidos graxos poliinsaturados. Tal ácido graxo, presente
nas nozes, é denominado ômega-3 e sua descoberta vem da Groenlândia, quando
pesquisadores notaram baixos índices de problemas cardiovasculares nos
esquimós, que baseavam sua alimentação em focas e baleias, onde se encontra o
ácido linoleico (n-3). Por meio dessa abertura, o presente trabalho busca a extração
do ômega-3 a partir das nozes, já que é comumente extraído do peixe. De início,
foram realizados testes de cromatografia por arraste, no laboratório de química da
escola Etec Professor Armando José Farinazzo, para que fosse comprovado a
existência de ômega-3 nas nozes e o resultado foi positivo. Após isso, diversas
buscas para tentar isolar o ômega-3 isolado foram feitas, porém, não houve sucesso
em nenhum dos seguintes testes e a realização do isolamento não foi concluída. O
resultado do presente trabalho é satisfatório, pois foi detectado a presença de
ômega-3 nas nozes e todas as pesquisas feitas podem servir de ponto de partida
para futuros trabalhos que visam o mesmo sentido proposto.
Nuts are a food of most importance when it comes to health as they are rich in polyunsaturated fatty acids. This fatty acid, present in nuts, is called omega-3 and its discovery comes from Greenland, when researchers noticed low rates of cardiovascular problems in Eskimos, who based their diet on seals and whales, where there was linoleic acid (n-3). Through this opening, the present work seeks the extraction of the omega-3 from the nuts, since it is commonly extracted from the fish. At the beginning, tests of chromatography were carried out by dragging, at the school Etec Professor Armando José Farinazzo, to verify the existence of omega-3 in the nuts and the result was positive. After that, several searches to isolate isolated omega-3s were made, however, there was no success in any of the following tests and insulation performance was not completed. The result of the present work is satisfactory, since the presence of omega-3 in the nuts was detected and all the researches done can serve as starting point for future works that aim at the same proposed meaning.
