Abstract

As relações entre as mudanças demográficas, socioeconômicas e epidemiológicas que levam a transição nutricional são complexas. De modo geral está ocorre um predomínio da dieta ocidental e o aumento da obesidade cresce. Essas mudanças acompanhadas de um estilo de vida sedentário parecem ocorrer primeiro em áreas urbanas, estendendo-se depois aos seguimentos de renda mais elevada das áreas rurais, frequentemente coexistindo com status da população ainda submetidos a déficits energéticos (TARDIDO; FALCAO, 2006).The relationships between the demographic, socioeconomic and epidemiological changes that lead to the nutritional transition are complex. In general, there is a predominance of the Western diet and the increase in obesity is growing. These changes accompanied by a sedentary lifestyle seem to occur first in urban areas, then extending to the higher income segments of rural areas, often coexisting with the status of the population still subject to energy deficits (TARDIDO; FALCAO, 2006).
