Resumo
No Brasil são desperdiçados 26 milhões de toneladas de resíduos sólidos, segundo a pesquisa feita pelo Brasil Escola, dentre esses estão os resíduos resultantes do processamento de hortaliças que podem causar sérios problemas ambientais caso não sejam tratados, além de representarem perdas significativas de nutrientes. Entre essas hortaliças utilizadas na agroindústria, está a cucurbita que possui partes não convencionais como cascas e sementes, devido a isso, o objetivo do projeto é produzir um sorvete da abóbora de pescoço para diversificar os sabores existentes no mercado atual e utilizar seus subprodutos, casca e semente. Por esses motivos, esse trabalho torna-se importante pelo alto desperdícios de alimentos que podem ser reaproveitados e a alta quantidade de pessoas que podem preencher sua despensa com novos aperitivos de forma saudável e consciente, proporcionando também um maior incentivo e lucro as indústrias.
In Brazil, 26 million tons of solid waste are wasted, according to a survey carried out by Brasil Escola. Among these is the waste resulting from the processing of vegetables, which can cause serious environmental problems if left untreated, as well as representing significant losses of nutrients. Among these vegetables used in agro-industry is the cucurbita, which has unconventional parts such as peels and seeds. The aim of the project is therefore to produce ice cream from the necked pumpkin in order to diversify the flavors on the current market and use its by-products, peel and seed. For these reasons, this work is important because of the high level of food waste that can be reused and the large number of people who can fill their larders with new snacks in a healthy and conscious way, also providing greater incentive and profit for industries.
