Memórias gustativas e suas influências culturais

Abstract

A memória gustativa tem um poder involuntário que nos remete uma lembrança de um sabor do passado. Também conhecida como ‘‘comfort food’’, é o tipo de gastronomia capaz de trazer momentos de prazer e relaxamento emocional. Este trabalho tem como objetivo explorar e identificar a definição de memória gustativa e suas influências com bases na cultura e tradição do Brasil, sendo realizada também uma pesquisa quali-quantitativa, por meio de um questionário online, com alguns moradores de Jundiaí e região com o intuito de explorar as influências culturais e históricas desta região. Nos resultados, podemos observar que as preparações mais consumidas foram o bolinho de chuva, a macarronada e o bolo de cenoura, produzidos principalmente por mães e avós.The gustatory memory has an involuntary power that reminds us of a taste of the past. Also known as "comfort food" is the type of gastronomy capable of bringing moments of pleasure and emotional relaxation. This work aims to explore and identify the definition of gustatory memory and its influences based on the culture and tradition of Brazil. A qualitative-quantitative survey was also carried out, through an online questionnaire, with some residents of Jundiaí and the region with the aim to explore the cultural and historical influences of this region. In the results, we can observe that the most consumed preparations were the rain cake, the pasta and the carrot cake, produced mainly by mothers and grandmothers.
