Resumo
O presente trabalho se dedicou a descrever o processo de fabricação de um queijo com vinho. Para a produção da bebida alcoólica, foi utilizado o suco de uva integral industrializado em escala laboratorial, que após passar por todas as etapas de desenvolvimento, resultou em um vinho de boa qualidade, que tornou possível a realização da segunda etapa do processo: a fabricação do queijo. Apesar das dificuldades encontradas durante o percurso, foram obtidos os resultados esperados, tornando possível a concretização da ideia inicial.
In the production of wine, whole grape juice industrialized on a laboratory scale was used in order to produce wine cheese, in relation to wine, the completion of the work was efficient, making the second stage of the process accessible: cheese making, despite disagreements production obtained the expected results, making it possible to conclude the work originally stipulated. In a certain part of the process, extra attention was needed from those involved, due to the ideal storage form for the product, since it has a corrosive factor if it is in contact with metallic materials.
