Resumo
A nutrição é muito importante para o desempenho do atleta durante o exercício físico. Portanto, o objetivo deste trabalho foi elaborar uma preparação com alto teor de carboidratos e, consequentemente, alta densidade energética. A receita elaborada foi tapioca recheada com iogurte saborizado com polpa de açaí congelada, maçã fuji, mel, aveia em flocos finos e geleia de frutas vermelhas. Realizou-se a revisão de literatura através de plataformas como Google Acadêmico, SciELO, livros e outros materiais, além do cálculo de preço, informação nutricional da preparação e teste prático no segundo semestre de 2019. No teste, a receita foi bem aceita, porém o iogurte apresentou uma consistência muito líquida para o contexto, fato que não interferiu no sabor. A porção rendeu 260 g, custando R$ 6,18. Concluiu-se que o objetivo do trabalho foi alcançado, pois o alimento apresentou 110 g de carboidratos na porção, representando 37% do valor de ingestão diário com base em uma dieta de 2.000 kcal.

Nutrition is very important for the athlete's performance during physical exercise. Therefore, the objective of this work was to prepare a preparation with a high content of carbohydrates and, consequently, high energy density. The recipe was tapioca stuffed with yogurt flavored with frozen açaí pulp, fuji apple, honey, thin flakes and red fruit jelly. Literature review was carried out through platforms such as Google Scholar, SciELO, books and other materials, in addition to price calculation, nutritional information on the preparation and practical test in the second half of 2019. In the test, the recipe was well accepted, however the yogurt had a very liquid consistency for the context, a fact that did not interfere in the flavor. The portion yielded 260 g, costing R $ 6.18. It was concluded that the objective of the work was reached, since the food presented 110 g of carbohydrates in the portion, representing 37% of the daily intake value based on a 2,000 kcal diet.
