Resumo
O presente estudo teve como objetivo produzir uma cerveja artesanal no estilo Belgian
Pale Ale adicionando beterraba ralada. Foram utilizados equipamentos em escala de bancada
e matéria prima para cerveja, adquiridas em lojas online. O projeto foi desenvolvido em 7
etapas sendo, brasagem, fervura, resfriamento, fermentação, primming e envase. A cerveja foi
submetida a análises de pH, Brix e sensoriais, como odor, paladar e aparência. A beterraba se
mostrou uma excelente alternativa para produção de cerveja no estilo Belgian Pale Ale, além
de agregar no sabor, as características sensoriais foram bem compatíveis com a da cerveja
artesanal, resultando numa combinação bem interessante.
The present study aimed to produce a craft beer in the Belgian Pale Ale style by adding grated beetroot. Bench-scale equipment and raw material for beer, purchased from online stores, were used. The project was developed in 7 stages: brazing, boiling, cooling, fermentation, priming and bottling. The beer was analyzed for pH, Brix and sensory analysis, such as odor, taste and appearance. Beetroot proved to be an excellent alternative for producing beer in the Belgian Pale Ale style, in addition to adding flavor, the sensory characteristics were very compatible with craft beer, produced in a very interesting combination.
